Chardonnay

Chardonnay is a green-skinned grape variety used to make white wine. It originated in the Burgundy wine region of eastern France but is now grown wherever wine is produced, from England to New Zealand. For new and developing wine regions, growing Chardonnay is seen as a “rite of passage” and an easy entry into the international wine market. The Chardonnay grape itself is very neutral, with many of the flavors commonly associated with the grape being derived from such influences as “terroir” and oak. Wines that have gone through malolactic fermentation tend to have softer acidity and fruit flavors with buttery mouth feel and hazelnut notes. It is clearly not autochthonous to Spain, and is here included as part of the Cava blend.

Terrain: This Cava was produced in the finest Cava producing region around Sant Sadurni d’Anoia, better know as the home to Freixenet, Cordoniu and other producers of Cava. The region enjoys a warm, mild, coastal climate which when combined with a sandy, permeable soil and plenty of rainfall (36 inches), make this a perfect region for growing white wine varietals.
Harvest: Hand picked and selected twice: initially in the vineyard, with a second selection on receipt at the winery.
Ageing: Methode Champenoise, secondary fermentation in the bottle. 22 months of bottle ageing.
Bottling: Bottled on the property.
Serving Temperature: Between 41º and 55º F
Alcohol Content: 11.5%

Tasting notes
Color: Pale straw.
Nose: Dry, minimal nose, but with small concentrated bubbles.
Palate: It is dry, light on the palate, with a refreshing acidity; perfect for celebrating with friends, or as an aperitif
