Xarel.lo

Xarel·lo is a white grape variety, of Spanish origin, primarily grown in Catalonia and the Balearic Islands. With Macabeu and Parellada, it is one of the three traditional varieties used to make the sparkling wine Cava. Xarel·lo can be strongly flavored, and is more aromatic than the other two Cava grape varieties (Parellada and Macabeo). It has a light aroma, faintly reminiscent of raisins. It produces a wine that is relatively high in alcohol, has great acidity, and a long finish.

Terrain: A warm, mild, coastal climate combined with a sandy, permeable soil and plenty of rainfall (36 inches), make this a perfect region for growing white wine varietals. Xarel.lo, not that well known to the American consumer, is better recognized as one of the three varietals that make up the region’s leading product, Cava.
Harvest: Hand picked and selected twice: initially in the vineyard, with a second selection on receipt at the winery.
Ageing: Fermented on the lees in stainless steel.
Bottling: Bottled on the property.
Serving Temperature: Between 41º and 55º F
Alcohol Content: 11.5%
